Ideas for shark fin melons!

Many of you tried growing shark fin melons this year then thought OK, I have an embarassingly large crop, what do I do with them now?

So, we are providing you with some ideas from a range of cultures, including India, China and South America.

For starters, the most traditional recipe is a Chinese shark fin melon soup. Here the mature shark fin melons are boiled in a broth until they take on a texture resembling shark fins (no real sharks are harmed in this recipe!)

For a main course, we suggest stuffed chilacayote. In South America, the crops are more often harvested young, when they are still small and firm, and called Chilacayote. 

Some of the Indian people we met found that the sharks fin melon made a good alternative to dudi as it was ready earlier, and a more reliable cropper in the UK. Try it in our recipe for Shark fin melon and channa curry.

Finally we have a dessert from the Canaries, cabello d’angelo that uses the strands of stewed shark fin melon in a pastry. Sounds wierd, but it works.
